Blackened Chicken and Broccoli Fettuccini Alfredo

Most of my friends know that I am a basic bitch when it comes to chain restaurants. I LOVE Olive Garden. Like am obsessed. Even though, I am sad to say I haven’t eaten there in about a year. I don’t have any near our new home but you best believe if I ever drive by one I am not too good to eat alone and fill up on breadsticks, salad and Fettuccine Alfredo. This dish is inspired by my love for Olive Garden and let me tell you it was pretty on point. The sauce might have been a little better, a tad cheesier. This is a very rich, creamy and fattening recipe and if you are trying to be healthy this is probably not the recipe for you but….the fettuccine noodles can be switched with zucchini noodles to remove the carbs which does help a lot and still taste fucking great!

Ingredients:

1 cup heavy whipping cream

1/4 cup Parmesan (shredded)

6 tbs butter

Olive oil

3 tbs poultry seasoning (I used Montreal Chicken seasoning, by McCormick)

6 cloves garlic (minced)

1 tbs flour

1 lb chicken tenderloins

1 large head broccoli (cut, trimmed and steamed)

Salt and pepper to taste

Directions:

Melt 2 tbs butter and olive oil in a skillet over medium heat. Cover the chicken tenderloins in the poultry seasoning on all sides. Add to the skillet and cook until cooked all the way through, about 5 min per side. You want there to be a golden and blackened crust on each side. You will need to boil a pot of water with olive oil for the pasta, follow directions on the package. After you have cooked the chicken, you will set aside. In a dutch oven or a deep skillet, you will melt 4 tbs of butter over low/medium heat. Toss in garlic and brown for a couple of min. Stir in flour until fully combined with butter and garlic, about 1 min. Pour in the heavy whipping cream and reduce heat. Add in the Parmesan cheese and salt and pepper and stir. Let simmer for about 10 min, be sure not to let it stick to bottom of pan. You will need to steam the broccoli as well, trim and cut into florets, cover about half way with water in a shallow skillet, cover with a lid and bring to boil for about 8 min. Toss the cooked noodles, chicken and broccoli into the Alfredo sauce. Top with more Parmesan cheese and enjoy!
