Chicken Fried Steak

Ingredients:

4 pieces of tenderized cubed steak

2 cups all purpose flour

2 eggs

1 cup milk

2 tbs season salt (I use Traeger seasoning)

1/2 cup Crisco or vegetable shortening (plus a little more if needed while frying)

4 tbs butter

Salt and pepper to taste

Gravy Ingredients:

2 cups Whole Milk

1/4 cup all purpose flour

Salt and Pepper to taste

Chicken Fried Steak Directions:

  1. Whisk together eggs and milk

  2. Soak cube steak in egg and milk mixture for a few minutes.

  3. On a large plate stir together flour, season salt and black pepper.

  4. Place one piece of milk and egg soaked cube steak into the flour mixture and cover with flour on all sides. Then dunk back into the egg and milk and then back into the flour mixture, covering on all sides.

  5. Repeat with all pieces of steak and set aside.

  6. Add shortening and butter to deep cast iron skillet over medium heat

  7. Once completely melted, add the flour covered steak to the skillet, one at a time. You can do two at a time if your skillet is big enough, you just want to make sure there is space between each piece of meat when frying, you don’t want them touching.

  8. Fry each piece until they are golden brown on each side and cooked all the way through. About 5 min per side. Make sure you heat isn’t too high or it will burn the crust but not cook the middle.

  9. Repeat this until all cube steak has been fried up. Set aside on a paper towel lined plate.

Gravy Directions:

  1. After you are done frying the CFS, pour any access grease out

  2. Pour milk into the skillet on low to medium heat, using a spatula, scrape the bottom of the skillet to get the little bits of fried breading from the bottom.

  3. Sprinkle the milk with flour, 1 tbs at a time. Whisk the entire time so it does not stick to the bottom

  4. Repeat adding the flour and whisking until you have used all the flour, make sure you don’t have any lumps. You may have to add more flour until it comes to the consistency you like. Just remember to never to whisking or you will have flour stuck to the bottom of the skillet.

  5. Add salt and pepper, 1/2 tsp at a time, tasting through out, until it is to your liking.

Add mashed potatoes onto a plate, top with a piece of chicken fried steak and smother in your gravy!
