Jack in the Crack, Fried Chicken Tacos

Anybody out there love Jack in the Box tacos like I do?! Don’t lie. I dislike people that are like “ ew those are so bad for you” Um, number one I don’t give a shit if they are bad for me they taste like I bundled up unicorns, rainbows and puppies and fried them up. Number two, you’re lying and just trying to look healthy, cause everybody knows they are fucking lit. Well this is my version of Jack in the Crack tacos, but with chicken. I am not even going to attempt to make the meat that is in those tacos.

Ingredients:

3 cups diced chicken breast

1 oz taco seasoning ( 1 package)

1/2 cup of your favorite salsa

1/4 cup chicken broth

2 tbs butter

1 small can green chilis

12 Corn Tortillas

1 cup shredded cheddar cheese

1 cup shredded lettuce

Cholula hot sauce for dipping

1 1/2 cup vegetable oil

Directions:

Melt butter in a skillet over medium heat. Stir in the chicken, taco seasoning, salsa, chicken broth and green chilis. Mix all together and cook until the chicken is fully cooked through. About 10/15 min.

While the chicken is cooking, heat the oil over medium heat. You may have to reduce the heat depending on your stove top.

Put a corn tortilla in the oil with a couple of scoops of the chicken mixture. Let fry for about 10/15 seconds and then fold one side of the tortilla over to cover the chicken. Press down with the flat part of your spatula to make it stick together and let fry for about 3 minutes. Flip the taco over to the other side and fry for about 3 more minutes. Add to a cookie rack to cool and spread the taco apart a little bit and stuff with cheese. Repeat until you have used all of your tortillas. You may have some chicken mixture left over!

The tacos will be hot enough that you can add the shredded cheese into the taco after you have removed from the heat. You can also add shredded lettuce and diced tomatoes, dip in Cholula hot sauce and eat up!
