Blueberry Streusel Muffins

My little sister can bake/cook 4 things. Chicken spaghetti, grilled cheese, blueberry muffins and olive cheesy bread. At least they are all really yummy recipes and not boring. She doesn’t really need to know how to cook or bake honestly she looks like a Revolve model. Skinny, tan, funny, cool…. all of it. Anyways, one of her favorite things on earth is Blueberry Streusel Muffins. I think she would eat them with every meal if she could, well I guess she could cause like I said, she’s skinny as hell. I am dedicating this recipe to her, my bestie, my sister, the hottest bitch in the family.

Ingredients:

2 cups flour

1 tsp salt

3 tsp baking powder

1 cup sugar

3/4 cup sour cream

2 Eggs

1/2 cup vegetable oil

1 tsp vanilla

1 1/2 cup fresh blueberries

1 tbs flour (to coat blueberries)

Streusel:

1/2 cup (1 stick) butter

1/4 cup brown sugar

1 cup flour

1/2 cup granulated sugar

2 tsp cinnamon

Directions:

Preheat oven to 400. Whisk together flour, baking powder, and salt. In a separate bowl, mix together eggs, oil, sour cream, vanilla and sugar. Combining both ingredients from the two bowls, pour dry mixture in with the wet mixture, stirring the whole time. In a separate bowl, coat 1 tbs of flour all over the blueberries. once coated, fold them into the batter until well incorporated.

You will now make the streusel. In a medium sized mixing bowl combine the flour, melted butter, cinnamon, brown sugar, and white sugar. Mix together well.

Pour muffin batter into a greased muffin tin about 3/4 the way full.Place in oven for 25/30 min. Smear with a large heaping of Land O’Lakes butter and enjoy!
