Homemade Donuts

Dough Ingredients:

4 cups flour

2 1/2 tsp dry active yeast

1 1/4 sticks unsalted butter (melted)

1 1/8 cup milk (warm)

1/3 cup sugar

2 eggs

1/2 tsp salt

Shortening or oil for frying

Cinnamon Sugar Topping Ingredients:

1 stick unsalted butter

1/2 tsp vanilla

1 cup granulated sugar

1/4 cup ground cinnamon

Chocolate Glaze Topping Ingredients:

1 cup semi-sweet chocolate chips

2 tbs butter

1 cup powdered sugar

1 tsp vanilla

3 tbs milk

Directions:

Pour the yeast, sugar and milk into a stand mixer bowl. Whisk together and let sit for 5 minutes. Turn the mixer on low and add the eggs, butter and salt. Mix well. Slowly, with the mixer and the dough hook attachment still stirring, pour in the flour, one cup at a time. Have the dough kneaded until it starts pulling away from the side of the bowl. Remove the dough and add to an oiled mixing bowl. Cover with plastic and refrigerate for 2 hours.

After the two hours, remove from the fridge and roll out onto a floured surface. The dough needs to be about 1/4 inch thick. Using a doughnut cutter or cookie cutter. Cut the dough out into doughnuts and donut holes. Place on a lined cookie sheet, cover with a dish towel and let rise for an hour.

After they are done rising, you will began to fry them. Pour in about 1 inch of vegetable oil into a hot deep skillet. Using a thermometer, make sure the oil is at 350 degrees. Once it has reached that degree, add in 3 donuts and fry for 20 seconds, and flip to the other side for 30/40 seconds or until golden brown. Remove and place on a cookie rack that has been placed on a cookie sheet. Repeat this until all the dough has been used. Set aside.

Cinnamon Sugar Directions:

In a small sauce pan over low heat, melt butter and vanilla. Mix together in a small mixing bowl the cinnamon and granulated sugar.

Grab a doughnut, dip one side in the melted butter and then dip that same side into your cinnamon sugar mixture. Repeat on all the doughnuts.

Chocolate Glazed Topping:

Melt butter in a small sauce pan over low heat. Pour in the chocolate chips, stir until smooth. Stir in the vanilla, milk, and slowly pour in the powdered sugar. 1/4 cup at a time. Mix until smooth and turn off heat. Grab a donut, dip one side into the chocolate glaze. I dip it a couple of times because I love chocolate :) Lay the side that hasn’t been dipped in chocolate onto a cookie rack to cool. Repeat on all donuts. Sprinkle with your favorite sprinkle and enjoy!
