Mashed Potatoes

These buttery cloud like potatoes are so damn good. The cream cheese takes them to the next level. Get ready to hear people make sexual noises while eating them :)

Ingredients:

4 Russet Potatoes

3/4 block cream cheese

1 cup shredded sharp cheddar cheese

6 tbs butter

salt and pepper to taste

1/2 cup sour cream

1/4 cup heavy whipping cream

Directions:

Rinse your potatoes. Peel 3 of the potatoes and leave the skin on the last one. Cut into 2 inch squares and add to a pot. Cover with water until the potatoes have about an inch of water over the top of all the potatoes. Bring to a boil. Sprinkle in 1 tbs of salt. Boil for about 10 min and do the fork check. Pierce one of the potato pieces with a fork and if it slides in easily with no pressure they are ready. If you have to press don’t to pierce, then keep boiling for 5 minutes and check again. Do this until done.

Once they are fully cooked, drain in a strainer and return to the pot. Add in the cream cheese, sharp cheddar, butter and sour cream. Using a hand mixer, blend until smooth and everything is melted into the potatoes. Add 1 tsp salt, 1 tsp pepper and heavy cream. Mix again with hand mixer until smooth. Keep adding salt and pepper 1/2 tsp at a time until it is to your liking, tasting in between.

Serve with a pat of butter on top or gravy and enjoy!
