Bacon and Cheese Breakfast Sammies

I saw on cooking.com a video of someone making a breakfast samich and it looked frakiong amazing so I started rummaging through my pantry looking for ingredients on how to whip this up. Ingredients:

Bacon ( 8 pieces)

6 pieces pepper jack cheese (deli sliced)

6 eggs (beaten)

2 tablespoons butter (melted)

1 package of Kings Hawaiian Rolls

Directions:

Preheat oven to 400. Cook bacon in a skillet, cook to your likeness. I do mine where it is still some what chewy since it is going to be baked later inside the sandwich. Once bacon is cooked, set aside. Pour out half the grease and leave the rest in the skillet. Pour the beaten eggs into the skillet on medium heat. Push around with spatula about a minute and turn off heat. Keep pushing around until cooked to your likeness. Remember it will get baked so I leave mine still a little slimy so the eggs don’t get too dry. Cut the rolls in half, where you have basically a sheet of tops of rolls and a sheet of bottoms of rolls. Tear the bacon into pieces and scatter across the bottom half of the rolls. Then lay down the eggs, covering all the bacon. Once all the eggs have covered the bacon and rolls lay out the cheese. Cover with the top half of the rolls. Lather the top of the rolls with melt butter. Wrap the rolls with foil and bake for 15/20 min. Remove from oven. Let sit for a few minutes, remove foil and then cut along the lines already cut for the rolls. This will make 12 separate sandwiches. Enjoy!
