Brown Sugar Seared Pork Chops with Creamed Corn

I should have put this recipe up as soon as I posted about it on Instagram, but I have had a V busy weekend hosting friends and family and drinking lots of alcohol. When I say I am too old for this shit, I mean it. I am too old for 3 days of drinking. I just can’t handle it anymore. I am still nursing a hangover and its Tuesday…. Anyways, this recipe is in my top 5 favorite dishes I have ever made. Its sweet, savory and creamy all in one recipe.

Ingredients:

4 large fresh corn on the cob ( using a serrated knife, remove kernels from cob and set aside)

1 yellow onion (chopped fine)

4 oz cream cheese

1 cup milk

3 tablespoons brown sugar

5 green onion (sliced fine)

4 bone in pork chops

3 tablespoon of any pork rub of your choice

3 tablespoons salted butter (Land O’ Lakes)

Salt and pepper to taste

Directions:

Melt butter in cast iron skillet over medium heat. While this is heating, lather your pork rub, 2 tablespoons brown sugar and salt and pepper on both sides of pork chops. Once butter has melted down, swirl the pan around so the butter covers the entire pan. Add two pork chops and sear for about 4 min, do the same to the other side then set aside. Add the last two pork chops and repeat what you did with the first two. Scrape the pan of any burnt pieces and throw away. Add 1 tablespoon butter and onion. Cook for about 4 min, until translucent. Add corn and green onion. Stir around and turn heat down to low/medium. Add cream cheese, milk and remaining brown sugar. Stir until melted and creamy, about 15 min. It should start getting thick. Put the pork chops back in the skillet with the creamed corn and cook for about 10 min. Serve with yeast rolls or corn bread and sign up for the show my 600 lb life cause this may add a couple pounds after eating :)
