Red stacked beef "anchiladas"

I am assuming everyone reading this has seen the show Schitts Creek. If not, you are a loser that needs to get with the program and binge it right now! The episode Moira is trying to teach David to make “anchiladas” is one of my favorites. It literally makes my cry from laughing so hard. If you want a good belly laugh, please please please do everyone a favor and get educated on Schitts Creek, so you can quote it along with everyone else in America. Well, these enchiladas are my take on the “anchiladas” made in this episode. I like doing stacked enchiladas instead of traditional because I am a lazy POS and this takes half the amount of time. Aint nobody got time to roll up each individual tortilla, I got a day job people!

Ingredients:

1 lb ground beef

1 yellow onion (fine chopped)

1 small can chopped green chilis

2 tablespoon butter

2 cans Hatch Organic red enchilada sauce

2 cups shredded cheddar cheese

10 soft large Corn tortillas (if you use the small traditional you will need about 15)

Directions:

Preheat oven on 400. Melt butter in skillet over medium heat, add onion and saute until translucent (about 5 min) add ground beef, cook until done (no pink) add green chilis and half a can of the red enchilada sauce. Stir until everything is well combined and cook for about 5 min. Add a splash of enchilada sauce to the bottom of a square casserole dish, swirl around to it covers the bottom. Add three corn tortillas (may overlap a little) and then add beef mixture from stove, shredded cheese and a few splashes of enchilada sauce, and repeat until the casserole dish is full. Put in oven and bake for 15 min or until cheese is melted. I like to hit the broil button for a couple min to make it a little bit crispy on top, just make sure you pay attention to it cause it will burn easily if left on broil too long. Serve with a strong ass Jalapeno Ranch Water and chips and salsa!
