Mama Mac's Chicken Soup

Mama Mac was my moms grandmother. My mother was obsessed with her. I believe Mama Mac had about 20 grandkids but for some reason my mom thought she was the favorite, if you ask any of her cousins, they all same the same thing. I think that really says something about a person when they make you feel so loved that you think there is no one else that they could love as much as you. My mom and her were very close so she was around the kitchen watching her cook while growing up. One of the things passed down, was this soup recipe. It really warms the soul and your heart. I hope everyone loves this recipe as much as my mom loved Mama Mac.

Ingredients:

4 large carrots (sliced)

3 celery stalks (sliced)

1 yellow onion (diced)

Egg noodles

1 Can Rotel tomatoes

6 cups chicken broth

1 Rotisserie Chicken ( all meat removed and shredded)

1 can Shoepeg corn

1 tablespoon oregano

1 teaspoon garlic powder

1 small can tomato paste (optional)

Directions:

Pour all ingredients except the noodles and tomato paste into large pot over medium heat. Cover with lid and let boil for about 10 min. Add noodles and let boil for about 10 more min. When noodles are done, reduce heat to simmer and add tomato paste. Let simmer for about 20 min stirring occasionally. Serve with crackers and a smile :)
