Cast Iron Pizza
PIZAAAAAAAAA! I live in Dallas, TX and we have the best Italian specialty market this side of Italy. I am literally obsessed. It’s called Jimmy’s Italian Food Store off of Fitzhugh Ave and it has been a Dallas staple for years. So, when I am making anything Italian, I pop in there to get all my ingredients. They have a meat and cheese counter where they will slice any kind of cheese and meat you need for your dish that day. It truly makes me feel like I am back eating and drinking my way through Italy. Summer of 2014 was a fun one, let me tell ya. We won’t get into all that though, just know I had a pretty good time.
Ingredients:
Frozen Pizza crust- or store bought refrigerated crust
Canned pizza sauce
Mozzarella pearls
Fresh sliced pepperoni
Corn meal
Flour
Olive oil
Fresh parmesan block
Fresh Basil
Lodge Cast Ironed Skillet
Directions:
Heat cast iron skillet in oven on 475 for 20 min. Roll out the crust on a floured surface. After the skillet is done heating put a tsp of olive oil and a teaspoon of cornmeal in the bottom of the skillet. Roll around until the bottom is completely covered in the corn meal. This keeps the crust from sticking. Put in the crust and leave about a centimeter between the crust and the sides of the skillet. Add the pizza sauce, mozzarella, toppings and a couple basil leaves. Leave about an inch of crust around the perimeter. Brush the crust with olive oil. Bake for about 20 min or until bubbly and golden. Top with shaved fresh parmesan and red pepper and dig in!
