Chocolate Chip Coconut Cookies

I was really craving some chocolate chip cookies tonight and when I was digging around in my baking cabinet for ingredients I saw the shredded coconut and was like yep, going to need that in my cookie as well. They ended up being fucking great. I hope y’all like them as much as I did.

Ingredients:

2 1/2 cups flour

1 tsp baking soda

1/2 tsp salt

2 eggs

1 tsp vanilla

8 tbs or 1 stick unsalted butter (room temp)

1 cup brown sugar

1 cup semi sweet chocolate chips

1/2 cup shredded coconut (unsweetened)

Directions:

Preheat oven to 350 degrees. In a medium sized mixing bowl, whisk together the flour, baking soda and salt. In your stand mixer (paddle attachment used) or a large mixing bowl with a hand mixer, beat together on low speed, the butter and the brown sugar. It should look light and fluffy once completely combined. About 2-3 min. Add in the eggs and vanilla, mix until fully incorporated together. Slowly pour in the flour mixture with the egg mixture, stand mixer still on, until it has all been combined. If you are using hand mixer, you may have to start and stop pouring the flour in intervals. Once combined, pour in the coconut and chocolate chips and fold into the dough. It should be a little lumpy, that is normal. Finally, scoop out your dough with a cookie scoop or roll into a ball about 3 tbs full. Place on a parchment lined cookie pan about 2 inches apart. These cookies don’t rise much so you should worry about them being too close to one another. Bake for about 12/15 min. You may have to do a couple of batches because the dough makes about 20 cookies. Remove from oven and let coo for a few minutes and transfer to a cookie rack to cool the rest of the time about 15 min. I slam the pan down on the counter right when I take them out so they flatten out a little bit but you don’t have to do that. Lastly, dunk your cookie in a glass on ice cold milk and enjoy!
