Fruit and Walnut Skillet Cobbler

I wanted to make a cobbler that was a little different than the normal peach or blackberry. The walnuts were definitely a game changer, the crunch made this so much better than a normal cobbler. I also have an obsession with my cast iron skillet so I would be remised if I didn’t use it to bake this beautiful dessert. A mixture of sweet, tangy and savory flavors wrap this sweet treat in a beautiful bow of perfection.

Ingredients:

Filling-

2 small containers black berries

2 green apples (peeled and diced)

1/2 cup walnuts

2 tbs corn starch

2 tsp lemon juice

1 cup granulated sugar

2 tbs butter

Biscuit Dumplings-

1 cup all purpose flour

1 tbs sugar

1 tsp baking powder

1/2 tsp salt

6 tbs cold butter (cut into small pieces)

3/4 cup buttermilk

Directions:

Preheat oven to 400. Heat your cast iron skillet over medium heat with butter. In a mixing bowl, toss your fruit in the corn starch. Once the butter has melted, pour in the fruit, sugar and lemon juice. Stir until it has because a thick sauce. reduce heat to low and let simmer for about 5 min and turn off heat. You will be using the skillet in the oven so do not remove filling.

Biscuit Dumplings-

Pour flour, sugar, baking powder, salt into a mixing bowl and whisk together. Add in the cold butter and using a pastry cutter or a fork cut the butter into the flour mixture. It should become sandy, pea sized pieces. start adding in the buttermilk 1 tbs at a time. Stirring the whole time until you have used all the buttermilk and it is evenly combined. Drop large scoops of the biscuit dough onto your filling that is in your skillet. Once you have dropped all the dough, put in oven for 20 minutes or until golden brown.

Serve with vanilla Bluebell ice cream on a hot summer day!
