Peanut Butter Chocolate Dipped Apples

Ingredients:

8 Granny Smith Apples

3 cups semi-sweet chocolate morsels

3 tbs creamy peanut butter

2 tbs coconut oil

8 wooden skewers or popsicle sticks

Optional Toppings: flaked coconut, pecans, sprinkles, Heath Bar pieces, sea salt

Directions:

Wash your apples, dry and remove the stems. Line a cookie sheet with parchment paper. It won’t stick to the chocolate dipped apples, caramel is another story…

Add the chocolate morsels, coconut oil, peanut butter to a microwave safe mixing bowl. Heat for 30 seconds. Remove and stir. Heat for another 30 seconds and then stir. Keep doing this until it is full smooth. It should only take about 45 seconds to get smooth. Make sure you don’t burn it by heating it too long!

Push your wooden skewer through the top of the apples. Dip into your choclate mixture and circle it around the bowl tilting at the same time so it cover the whole apple all the way the the wooden skewer. Once you have dipped, let excess drip off and using a spatula run it again the bottom of the apple to remove any dripping. Place the apple into a plate filled with your favorite topping and handful by handful sprinkle the topping over the top and sides of the dipped apple. I do not roll it in the toppings because it gets everywhere and doesn’t look as good. Once you have covered in your topping, place it on the lined cookie sheet. Repeat with all the apples until there are none left. Place the cookie sheet with the apples into the refrigerator for about an hour. Once they have chilled, remove and enjoy! I like to place mine in a cellophane wrapper with a cute bow and give them as gifts!
