Bacon Wrapped Zucchini & Cheese Stuffed Chicken Thighs
I grill, cook and bake. William (my boyfriend) is trying to get the hang of grilling but I am a psycho control freak so I haven’t really given him much of an opportunity. Oops… I am trying to work on that. Anyways, I put this together last minute because I didn’t feel like going to the store so I rummaged through the fridge and came up with this. I used a Traeger Smoker on these but they can be baked, or grilled if they need to be. The smoker just gives it that extra kick of flavor and moisture.
Ingredients:
5 chicken thighs
10 pieces of bacon
2 large zucchini (sliced in half and cut long wise)
Deli sliced cheese of your choice (I used Colby jack)
2 tablespoons Traeger Fin and Feather seasoning (can use any kind of country seasoning)
1 cup your favorite BBQ sauce ( I used Traeger Sweet and Spicy BBQ Sauce)
Directions:
Smoker-
Open each chicken thigh on a flat surface. Spread your poultry seasoning on both sides of it. Lay back flat on top of two pieces of bacon with inside part facing up. Add in about 5 sliced zucchini and a slice of cheese and roll up in bacon. Secure with two large toothpicks. Once done set aside on cookie sheet. Open smoker and turn to smoke option. Leave lid open to get fire going. Change temp to 325 and close lid. Let heat for 15/20 min. Once it is heated up put the chicken thighs directly on grate and mop with bbq sauce close lid and let smoke for 35 min. After the 35 min, flip the chicken thighs and mop the other side with the remainder of the bbq sauce. Let smoke for 30 min. Once done, remove and let sit for a few minutes before eating.
Oven-
Preheat oven to 400 and bake for 45 min. Let sit a few minutes and slice!
