Chicken Teriyaki Fried Rice
My all time favorite restaurant in the town I grew up in shut down so I have made it my life goal to replicate the fried rice and the “sexy sauce”. The ventilation wasn’t amazing in there so you may or may not have smelled when you left but it was ll worth it. This is the closest I have gotten to replicating it… Hope everyone enjoys!
Ingredients:
Chicken Teriyaki-
3 chicken breast (cut into bite sized pieces)
1 cup teriyaki sauce
2 tsp corn starch
3 tbs honey
3 tbs soy sauce
Salt and pepper
Sesame seeds
3 tbs butter
2 tbs olive oil
Fried Rice-
4 cups white rice (cooked the night before and refrigerated 24 hours)
1/2 cup fine chopped carrots
1/2 cup fine chopped white onion
4 eggs (beaten)
1/2 cup chopped green onion
3/4 cup soy sauce
4 tablespoons butter
salt and pepper to taste
Sesame Seeds
Sexy Sauce- Make the night before eating, refrigerate 24 hours
1 1/4 cup mayo
1 tsp granulated sugar
1/2 tsp garlic powder
1/4 tsp paprika
1 tbs melted butter (unsalted)
1 tsp tomato paste
1/2 tsp cayenne pepper
2-3 tbs water
Directions:
Chicken Teriyaki-
Heat butter and olive oil over medium heat. Once melted, add in chicken and cover with salt and pepper. Cook all the way through. add soy sauce. Cook for about 1 min. Stir teriyaki, honey and corn starch together in a small separate bowl until all the way mixed together…no lumps. Pour into skillet with the chicken and stir around until it starts to thicken. add sesame seeds and turn off heat.
Fried Rice-
Melt 2 tbs butter and 2 tbs olive oil in a wok or on a large flat griddle (like a Blackstone) over medium heat. Once melted, add the eggs and cook until full scrambled, moving around and chopping into pieces using your spatula. Add in the onion, carrot and green onion. Mix with egg and cook for about 3 min. Add the rice and 2 more tbs of butter. Moving around the wok and mixing with the veggies and the egg. Once fully incorporated, add soy sauce, sesame seeds and salt and pepper. Let cook for about 5 min, and stir and cook for 5 more min. I like mine a tiny bit crispy so I cook mine longer than normal. Stir and cook 5 more min. Add the chicken and stir until all mixed together. Serve with sexy sauce and enjoy!
Sexy Sauce-
Mix together all ingredients and refrigerate over night. Mix together before serving and pour on rice, chicken or steak!
