Buffalo Chicken Sandwich
Y’all. This fucking sandwich has changed my life. I usually just soak my fried chicken in buttermilk and spices over night but last time I was in east Texas one of my friends uncles told me he adds beer to his buttermilk. I tried it. Wow. It was a game changer. I used what I had, which was Deep Ellum Brewing, Dallas Blonde. You can use any lighter beer. I wouldn’t use like a IPA. Get ready to eat the best sandwich of your life. I would even go as far to say it is better then Chick-Fil-A….
Ingredients:
6 Chicken Cutlets (chicken breast cut in half, hamburger style, to make thinner pieces of chicken)
3 cups buttermilk
1/2 can light beer
1 tsp paprika
1 tsp garlic powder
1 tsp black pepper
1 tsp ground red cayenne pepper
Breading Ingredients:
2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tbs Tony’s seasoning (or any cajun seasoning)
1 tbs black pepper
2 eggs (beaten)
2 Cups vegetable oil
6 hamburger buns
2 cups Franks Red Hot
4 tbs salted butter
6 slices pepper jack cheese
Ranch Dressing
Directions:
1. Whisk together buttermilk, beer, paprika, garlic powder, cayenne pepper and black pepper in a large bowl. Place chicken cutlets into the buttermilk mixture, cover and refrigerate at least 12 hours.
2. In a large dredging pan or bowl mix together flour, baking powder, baking soda, cajun seasoning, black pepper.
3. Remove the chicken from the refrigerator. You will be removing one chicken breast at a time then dredging and setting aside onto a plate. DO NOT THROW OUT THE BUTTERMILK MIXTURE.
4. Remove a cutlet, dunk into beaten eggs until covered on all sides, then into the flour mixture pressing the flour into the chicken, then into the buttermilk mixture and then back into the flour mixture pressing the flour into the chicken again. Set aside. Repeat this until all cutlets have been dredged.
5. Heat oil in a deep skillet. It needs to get to about 375 degrees.
6. Place your coated chicken cutlet (one or two at a time depending on size of your skillet, you want space between the chicken, not squished into the skillet) into the hot oil.
7. Let fry for about 3 minutes per side. Once done frying, place onto a towel lined plate to soak up oil. Repeat until all chicken breasts have been fried.
8. Preheat oven to 350
9. Place a slice of pepper jack cheese onto each of the chicken cutlets and then put each of the cheese covered chicken onto a cookie sheet and into the oven.
10. Bake for about 10/12 minutes
11. While the chicken is baking, make the hot sauce. In a small sauce pan, add your Franks Red Hot and butter. Stir together and heat until fully melted then turn off heat.
12. Remove the chicken from the oven.
13. Spread butter on both sides of hamburger buns and toast until golden.
14. Place a cheesy fried piece of chicken onto a toasted bottom bun, spread top bun with ranch dressing, pour Franks Red Hot onto the chicken then place the top bun on the chicken, add pickles if you want, and Enjoy!
